Frittata Ingredients
- Prepare of Frittata.
- You need 1 of 9.6 oz package Jimmy Dean sausage crumble.
- Prepare 1/2 of onion chopped.
- You need 2 cup of cubed red potatoes.
- You need 8 of Eggs beatend.
- You need 1/4 cup of Parmesan cheese.
- Prepare 1/4 tsp of Salt.
- Prepare 1/4 tsp of Pepper.
- Prepare 1/2 cup of Chopped tomatoes.
- Prepare 2 of Green onions thinly sliced.

Frittata step by step
- Heat oven to 350°F.
- Add eggs salt pepper and cheese to a large mixing bowl and mix well set aside.
- In a large pot cook the potatoes in salted water. Add potatoes to boiling water cooking 5 to 7 minutes.
- While potatoes are cooking, in a skillet over medium heat cook the onions with 1 tablespoon of vegetable oil until brown and tender about 2 minutes stirring often.
- Add sausage to the onions, cooking 5 minutes stirring often.
- Drain potatoes and add to the skillet.
- Add the egg mixture to the skillet, mixing well with other ingredients.
- Cook over medium heat 2 minutes, occasionally lifting edge with a spatula and tilting skillet to allow uncooked egg to flow underneath. Do not stir.
- Reduce heat to medium low and cook another 3 minutes until eggs are firm on the bottom.
- Remove skillet from stove top and place in from the oven until eggs are firm about 10 minutes.
- Remove from oven and cut into wedges. Top with tomatoes and green onions and serve. Also top with crumbled cooked bacon.
- May also top with 3/4 cup shredded cheese immediately prior to placing into oven.
